My poor Mom had a sore throat for a few days, so I wanted to make something to help her soothe it. This recipe did the trick!

Add a tablespoon of extra virgin olive oil in a pot. Add one thinly sliced onion and several sliced mushrooms. Add three chopped garlic cloves and some salt. Saute everything for a few minutes, until the onions are soft and slightly turning brown.

After they’re done sautéing, add a bunch of chopped green onions and three cubed, medium-sized potatoes. Sprinkle some more salt in the pot.

Add a pint of vegetable broth. This is the one I used.

Bring to a boil, partially cover and simmer until potatoes are tender (about 15-20 minutes).

After the potatoes are tender, add some mixed veggies to the mix. I used about a third of this bag.

Add salt and pepper to taste, chopped cilantro and two bay leaves. Partially cover and simmer for ten more minutes. After it’s done simmering, take out the bay leaves.

That’s it! A wonderful pot of delicious vegetable soup that can soothe any sore throat.
